High Fiber Oatmeal (baby/toddler/adult friendly!)

Ingredients:

* 2 Apples - washed and grated

*1 cup old-fashioned oats

*2 cups of Milk of choice (or water) - I have done all milk and half milk/half water

*2-ish Tbsp almond butter

*Dash of cinnamon

Instructions:

  1. Wash and grate apples - I cut them into chunks and put into a food processor to make it fast and easy!

  2. Place all ingredients (apple, oats, milk/water, almond butter, cinnamon) into a saucepan.

  3. Simmer on low until most of liquid has been absorbed and oatmeal thickens, about 5-10 minutes. Stir often,.

  4. Cool slightly before eating! (especially for baby/toddler!)

Pro-Tip from Dietitian Nikki: Store extra into portioned silicone ice-cube trays and freeze, pop them out and keep in a ziplock bag labeled for easy breakfast on a busy morning! It reheats so easily in the microwave. This is how we “kid-meal-prep!”

** This recipe can be halved - I purposely make extra to create a freezer stash.
